Simple Steamed Sattvic Stew/Koottu

Ingredients:

  1. Any vegetable(s) of your choice - 500gms
  2. Pumpkin - 300gms
  3. Coconut gratings - 1 cup
  4. Cilantro / Coriander leaves - 1 cup
  5. Curry leaves - 1 spring
  6. Cumin seeds - 1 table spoon
  7. Black pepper - as per taste
  8. Rock salt - as per taste

Optional Ingredients:

  1. Ginger - 1 inch cube
  2. Green Chili - 4 nos
  3. Sprouts - 100gms
  4. Tomato - 50gms

Ingredients (for 2 people):

  1. 5 types of vegetables – 300 grams
  2. Coconut – 4 to 5 pieces
  3. Cumin seeds – 3/4 teaspoon
  4. Green chilly – 1 or add as per its spicy level
  5. Curd – 1/2 cup
  6. Mustard & Urad dal – 1/4 teaspoon
  7. Curry leaves – 1 spring
  8. Rock salt – as per taste

Vegetable Poriyal

Any one of the vegetables of your choice can be used for Poriyal preparation.

Ingredients: (measurement given for 2 people)
  • Vegetable - 100 to 150 grams (chopped into small pieces)
  • Sambhar powder - 1/4 table spoon
  • Rock salt - as per taste
  • Water - as required
  • Grated coconut - 1 or 2 table spoons
Method:
  1. Wash and cut the vegetables into small pieces. 
  2. Sprinkle little bit of water and cook the vegetables for 2 to 3 minutes. Cover it with a lid while cooking. 
  3. Add Sambhar powder and mix it well. 
  4. Turn-off the stove. 
  5. Add salt to taste. 
  6. When it becomes slightly cool, add the grated coconut.
Bitter Gourd & Ladies Finger poriyal can also be made without oil.
Method for Bitter Gourd:
  1. Cut the bitter gourd into small pieces. 
  2. Add little bit of water and cook for few minutes. 
  3. When it is cooked for 3/4, add chopped tomato. 
  4. It will become mushy and mix well with bitter gourd. 
  5. Add 1/4 table spoon of chilli powder and saute for a minute. 
  6. Turn-off the stove. 
  7. Meanwhile grind 1/4 cup of grated coconut and 1/2 table spoon of cumin seeds and keep the paste ready. 
  8. After turning-off the stove, put coconut-cumin paste in the vessel, add salt and mix thoroughly.
Method for Ladies finger:
  1. Put chopped ladies finger and big onion in a pan. 
  2. Saute it for few minutes. 
  3. Add chopped tomato and saute till the vegetables become soft. 
  4. Add chilli powder and saute for a minute. 
  5. Turn-off the stove and add salt.

Greens Kootu

Ingredients: (for 2 people)
  • Chopped Greens - 2 cups
  • Sprouted green gram - 30 grams
  • Cumin seeds - 1/2 table spoon
  • Small onion - 5 to 10 pieces
  • Garlic clove - 1 or 2 pieces
  • Green chilli - 1 no.
  • Rock salt - to taste
  • Grated coconut - 1 or 2 table spoons 
  • Coriander leaves - little bit 
Method to make sprouts:
  • Soak green grams in water for minimum 4 hours on the previous day. 
  • Before going to the bed, wash the green grams twice and drain the excess water. 
  • Put that in another bowl and close it with a lid in such a way that there is a slight air flow inside the bowl. 
  • On next day morning, you will see the sprouted green grams. 
  • If you know any other alternate ways to make sprouts, please follow that.
Method to make Greens kootu:
  • Put sprouted green grams, cumin seeds, onion, garlic cloves & green chilli (without cutting or removing the stem) in a vessel, add required water and cook. 
  • When it is half cooked, add the chopped greens and cover it with lid. 
  • When it is slightly cooked, turn-off the stove and add salt. 
  • Adding grated coconut & coriander leaves are optional. But, it should be added only after the heat of the dish is reduced to a level when we can eat.
