Barnyard millet Coconut rice

- Barnyard millet – 1 cup (150 grams)
- Water – 2 1/4 cups
- Gingelly (Sesame) oil – 2 teaspoons
- Clove – 2 nos.
- Bengal gram (Channa dal) – 1 teaspoon
- Onion – 1 (chopped lengthwise)
- Pepper – 8 nos.
- Curry leaves – 2 springs
- Coriander leaves – little quantity (chopped)
- Grated coconut – 1 cup (150 grams)
- Rock salt – as per taste

Foxtail millet Cauliflower & Broccoli rice

Ingredients:
- Foxtail millet – 1 cup (150 gms)
- Water – 2 1/2 cups
- Cauliflower florets – 1 cup (75 gms)
- Broccoli florets – 1 cup (75 gms)
- Green peas – 1/4 cup (25 gms)
- Tomato – 2 or 3 medium sized
- Cumin – 1/2 teaspoon
- Turmeric powder – 2 pinches
- Lemon – 1/2 piece
- Coriander leaves – 2 teaspoons
- Pudina leaves – 8
- Ginger – 1/2 inch piece (grated)
- Pepper – 6 to 8 nos.

Barnyard millet Tomato rice

Ingredients:
- Barnyard millet – 1 cup (150 gms)
- Water – 3 cups
- Tomato – 3 medium sized
- Onion (big or small) – 1/2 cup
- Ginger & garlic paste – 1 teaspoon
- Coriander leaf – 1/4 cup
- Pudhina leaves – 6
- Gingelly (Sesame) oil – 2 teaspoons
- Mustard – 1/4 teaspoon
- Fennel - 1/2 teaspoon
- Curry leaves – 1 spring
- Green chilly – 1 no.
- Chilly powder – 1/4 teaspoon
- Turmeric powder – 2 pinches
- Rock salt – as required
- Cinnamon – 1 inch piece
- Clove – 3 nos.
- Bay leaf – 2
- Black stone flower – 1 teaspoon
Kodo millet Groundnut or Peanut rice

- Kodo millet – 1 cup (100 gms)
- Water – 2 1/2 cup
- Gingelly (Sesame) oil – 1 teaspoon
- Mustard – 1/2 teaspoon
- Peanuts – 2 teaspoons

- Rock salt - as per taste
To dry roast & grind:
- Peanuts – 1/4 cup
- Urad dhal – 1 teaspoon
- Dry red chilly – 2 nos.
- Sesame seeds – 1 teaspoon
- Coconut – 2 teaspoons (grated or sliced)
Kodo millet Vangi bath (Brinjal rice)

- Kodo millet – 1 cup (100 gms)
- Water – 2 1/4 cups
- Cumin – 1/4 teaspoon
- Cashewnuts – 8 nos.
- Onion – 1 (chopped lengthwise)
- Brinjal – 150 gms (cut lengthwise)
- Rock salt – as per taste
- Gingelly (Sesame) oil – 3 teaspoons
- Curry leaves – 1 spring
